Does anyone envisage an issue using a simple custom made braket to allow a caliper to be used with an oversized disc brake rotor? (Specifically for P5) Assume that the rotor and caliper are otherwise allowable.

no.many people do that it is a common modification

It's usually the only way to get after market calipers to match with the discs.
